SMOKE CHIPS How to use the chips on a gas grill/BBQ: For each pound of meat or fish, place 1/4 cup of chips in a bowl of hot water for 15 minutes. Pour out the water, and place the chips on a piece of foil. Set the foil on the grill next to your meat or fish and close the lid. The chips will begin to smoke and infuse your food with the sweet flavor of the fruitwood. 1/4 cup per pound will give you a medium smoke. Use less for light smoke, more for a stronger smoke flavor. What kind of wood should I use? Apple: Sweet and mild. Great for pork and all kinds of sausages. Also good for duck and chicken. Cherry: Very sweet and aromatic. Fabulous for duck, also good for beef and pork. Pecan: Similar to hickory. Great for pork, venison, burgers. Persimmon: A subtly sweet, delicate smoke, very versatile. Use with seafood, tender cuts of beef, lamb, chicken, pork. Plum: Aromatic and more assertive than apple. Great with pork chops, sausages, lamb, venison.
