LITTLE GEM SALAD WITH ASIAN PEARS, FUYU SLICES, AND POMEGRANATE
Kosui, 20th Century, Kikusui, or Yali pears worl well for this delicious, easy, elegant salad.
An easy, Elegant salad - Serves 4
6 cups Little Gem lettuce (Coleman Farms)
2 Asian Pears, cored and sliced
2 Fuyu Persimmons, sliced crosswise
¼ cup pomegranate seeds
Dressing:
1 tsp. minced shallot
1 ½ tsp. Dijon mustard
¼ tsp. sea salt
2 Tbs. Balsamic vinegar
6Tbs. Olive oil
Mix the dressing ingredients. Toss the lettuce, pear, and persimmon slices in the dressing. Arrange on plates and top with pomegranate seeds.
