ELEPHANT HEART PLUMS The king of the Japanese plum, very large, heart haped, with tart mottled greenish purple skin and deep red flesh. Freestone. Firn, meaty yet juicy, richly flavored flesh has a wine-like complexity, slices well. Sometimes there is a pocket of sugar crystals near the tip. Listed on the Slow Food Ark of Taste. Season: August Size: 28 to 40 per metric layer Suggested uses: Fresh eating, salads, cheese platters, baking, sorbets, preserves, sauces. Shelf life: 10 days in your cooler for raw use, up to 3 weeks if you are cooking them. |
