FORELLE PEARS
With their pale green skin accented by a speckled red blush, Forelle pears - whose name means "Trout" in German - are very pretty. Their sweet flesh is medium juicy, denser than that of Bartlett and Comice, but not quite as dense as that of Bosc pears. To test the ripeness of a pear, don't squeeze the body, but rather apply gently pressure to the neck. If it yields, the pear is fully ripe. Season: October Size: 20 to 32 per metric layer Suggested uses: the petite Forelle are perfect for baking of poaching whole, also good for broiling or in salads. Lovely on a fruit platter. Shelf life: Can be delivered chilled and firm, in which case it will keep at 32 degrees for 3 weeks. To soften, bring to room temperature for up to 5 days. Can also be delivered ready to eat. |
